Pinkie recipes

Wondering if anyone here can suggest some ways to cook whole Pinkies, I wanna cook one or two up for a group of people. I have one plan which is to stuff with sliced lemon onion and tomato, and marinated with a mix of cumin, paprika, chilli, garlic, lemon juce and olive oil.

Probably preaching to the converted but just in case.
Make sure you score pretty deep in the thickest part of the fish to allow the heat, and some marinade, to get in. Helps cook it even.
Dont marinade for to long or make the marinade to strong. The fish is the dish and the marinade is the kicker to go with it. Pinkies have a beautiful flavour but it is delecate. 1 hour is heaps.
BBQ or oven? On a BBQ most of the heat comes direct from the plate so if done in foil turn a couple of times to keep the heat evenly penetrating. If done in the oven then it's not a problem but remove the foil from the top 5min before it's done to give one side a crispy skin. Well semi crisp.
Last thing is dont over cook it. Check regularly and pull it off when it is just about done. It will continue to cook while you are getting yourself sorted to serve it (or if you are like me, invoking cooks privelage, and removing the cheeks for myself)
Sometimes when the water is quiet, you can hear the fish laughing at you !

IMO = wrapped in foil. Traps the moisture. Marinade sounds fine, but also add a good dollop of butter.
