Best you head for the fisheries website, grab a licence each and you will have answers to all those questions.

Lots of rules to know before you start snatching those bugs.

I boil for 4 minutes and then slice them in half and onto the barbie with soy sauce and honey. Mmmmmmmmm.

Can't wait for them to come back in again.

no need to bleed, when grabbing them by hand just get your hand at the back of the main shell (gloves are a must) all stuff i have read about crays and catching them you would have to be quick to get them by hand, a snare is a better option. as far as care for them , just place them in your catch bag as long as they are size and that would do.

There is plenty of sharp bits on them so yes to the gloves. Grabbing by hand is OK as long as they have nowhere to run to. Dont try catch them by the feelers, they will just break. If they are setose, in berry, less than 77mm for both or over 105mm for females you have to put them back. Best of luck "placing" in a bag, you shove and hold or they will quickly get out. If your keeping them tail each one (rip the middle tail off) which tells authorities your keeping it for dinner. Don't forget to rip the shitter out before you eat it.

Last but not least, respect the fishery. Please read the handbook you got with the licence.
