Cooking / Pickling Octopus

Hi All went for a crab in the sound today ...and ended up pulling up not one but two big occy's in the nets...one will be going in the bait freezer, the other I wanted to cook up and/or maybe pickle ...if i remember right the ole man used to skin them bash them and pressure boil them ...then chop up and put them in a tomato sauce base type thing...and also is pickling them a easy process a garlic / chilli / vinegar mix marinade like the shops sell in jars...thanks in advance

Use the search function, going back a while there was a lot of entries on peoples choices and how they did it.
One of the secrets of tenderising it is to freeze it first, semi thaw it until its just pliable then refreeze it. This stops you having to try to chew through something the same texture as jelly rubber off your speargun.

just skinned them with the squid we got...strewth that was a chore ...I'll throw in the freezer for now ..time to grab a beer and do some searching...cheers

Have done the pickled occy lots of times and comes out better than the shops one too, didn't bother with freezing but it came out sensational! I found a recipe on here that I think Jodie posted that worked out really well

Yeah, the recipes on here are the goods. I also use the same marinade/pickling brew for abalone, but you only have to steam that for a couple of minutes first after cleaning and cutting into pieces. Good with a beer.

Char grilling is the way to
Char grilling is the way to go, but it must be tenderised by bashing it to death for a good 30 mins and or frozen for several weeks. then thaw marinate with oregano, lemon olive oil and salt mix and char grill whilst continually marinating. simply sensational once you get it right

i caught a occy in a crab net
i caught a occy in a crab net on the weekend aswell, and a small eagle ray =/. i simmerd the occy in water garlic and some white wine vinager for about a hour, let it cool for another hour under cold water the skin just falls off. cut it up and pickled it with chillies bit of lemon + bits n pieces out of the fridge tastes pretty good and prety tender

I cook occy a lot. I usually simmer for 20-30 mins(you need to test ) depending on the size pieces.Comes out tender.Into a container with chopped parsley,lemon juice and olive oil. Refrigerate overnight. Absolutely superb.
