Never used snelled hooks and have not lost too many fish using ganged tarpons, IMO keep your rigs simple , the more knots equals more chances of things stuffing up
A friend and fellow member was snapping off snells while fighting fish regularly until i showed him how i tie them and since changing i believe he hasn't had a problem. Maybe look at another method of tying snells?

Lubricate
make sure you libricate (spit) when you tighten the knot. Friction (heat) kills the line.

I use snells all the time and
I use snells all the time and have never had a problem, mine look like yours too. I use 120lb and 150lb jinki to do snells.
