Mmmm mmm
Nice looking and more importantly tasting fish!. I need to find out if there's a Qld equivalent. I suppose it's either going to be a Nannie or a Coral trout that would fit the bill.
My wife understands why I clean my rods n reels in the shower....

Rainbow colour shine
Johnny, just wanted to ask about the rainbow shine you said that dhui had.
I caught a decent one off gracetown & filleting out in sunlight it looked normal from what i can remember. But when we were in the kitchen under some old school yellow halogen lights, the flesh had a rainbow almost oil slick look it. I almost thought it was buggered but took it outside in better light and looked fine. Was yours the same? Fished tasted awesome and definitly nothing wrong with it from what we could tell.
Cheers

its the angle the flesh has
its the angle the flesh has been cut at and light refraction off the muscle fibres, can happen to many different types of meat. similar to light shinning through a glass prism.
would be an element of luck to it, in your scenario the type of light (and maybe the angle the light was coming from) changed the situation.
i guess (and it is a guess) it would be less likely to happen if the flesh is mushy and more likely if it has some reasonable structure/firmness. probably also more likely from a single source of light close in like a head lamp compared to daylight with sunlight being reflected off lots of objects.
