I've never bothered much with wings, but now that the BBQ's setup I might have to try again sometime. Was definately good having them at the Abrolhos. Especially with a dollop of butter simmering away, infusing. Oddly enough, I love coral trout wings (the best wings) but am not a fan of the fillets...

 

How long do you cook the wings for on the BBQ and do you flip them. I'm guessing you crack them flat? Hood down or up?
Takes a while just waiting for it, would be good to leave it and come back after a timer.

Until some years ago have wings and keels of snapper at Finlays in Kalbarri. After that I was hooked. Yum. I think the nicest taste come from the meat between the bones. Like fillet steak compared with others.

whilst still on the bbq. I just hand out forks to the guests and say, "tuck in".

As Neels, said its like comparing fillet steak with rump. the texture is finer and the taste is much sweeter.

 

If you hae never done it before, don't go blunting your knives trying to get the wings off, there is a very easy technique that unlocks the wing from the head.

and hubbie love the wings, have to keep them from all fish and the heads for daughters Singaporean sister in law, so when we catch fish heads and wings are a must.  But I don't like them too fishy for me.  But do love snapper livers, breadcrumbed on the bbq then slap them  on italian bread with a drizzle of olive oil, oh yummy my mouth is watering hahaha

When I was filleting at the lighthouse tables I was surprised at the number of guys that came to chat, that had no idea how to remove the wings. They had simply given up after blunting their knives and were letting prime flesh go in the bin. When I showed them the little bone you prize open to unlock the wing they couldn't believe it. I guess a fair more wings will be utilised by those guys from now on.

 

If anyone is interested I might try and do a little video piece on how to do it in an upcoming issue of Reeltime. Basically it is just about finding the right bone to unhinge.

big fan of the wings here too!i always have the side cutters handy for the wings,make life much easier
