I must admit.. Sambos to me offshore are like blowies inshore... they ANNOY ME!!!! LOL. I dunno, I guess if I can't eat it it's not something I want to stretch my tired body. Mind you, I get great satisfaction over releasing table fish when I have my quota.

nothing wrong with a nice piece of fresh sambo done in a creamy lemon sauce over a bed of mashd spuds or chips.you should give it a go sometime as long as its not too big or full of worms

using fillets about 15mm
using fillets about 15mm thick, put a bit of butter in pan , when melted place the filet in the pan and cook till not quite ready on one side turn over pouring a generous serving of fresh cream over fish untill just covering the fillet then add lemon juice to give it a bit of zing , taste the sauce to get it just right for your taste, the cream will reduce to a nice thick sauce but be carefull not to over do the sauce as it will turn, at this stage your fish is ready to serve on your choice of chips or mash then pour the remaining sauce over top , all thats left to do is sit back and enjoy then do the dishes... this recipee will work well on any fish that has a firm flesh. by the way this is Sandy's recipe not mine

i know what you mean about
i know what you mean about washing up, some times you use more dishes than you realy need to just to see someone else wash them up. i do most of the cooking at home as Sandy cooks all day and some of the stuff i do is Sandys recipees some are mine but most are try a bit of this and a bit of that
