sashimi

a guy i work with reckons you shouldnt eat tuna as sashimi unless its been chilled for 2 days to kill worms and bacteria, ive always eaten it fresh, as in almost straight away on the deck of the boat or at least that same night.
what are your thoughts?

Sounds like bull to me.
I prefer it chilled rather than off the fish's back, simply because it firms up once chilled and much easier to prep.

Some countries require it to be frozen (e.g. 24 hrs at -20C), but chilling won't kill anything.
A good/trained sashimi chef will check for worms/other parasites, so if doing it yourself at least look at the flesh, and make your own decisions.

Can u freeze the tuna?
Quick question,
We caught some reasonable tuna in exmouth last week and I cut 2 medium sized ones up for a family gathering today.
They were awesome sashimi
My question is I have 2 others that I have already gutted and cut the head off.
If I put them in vac pack bags can I put them in the freezer to thaw out and make more sashimi at a later stage?
Or will freezing and the thawing make the meat go all mushy?

it freezes just fine but when the Japs freeze good tuna (SBT) which is oily they freeze it down to -40 at least, because long term the oil doesnt otherwise freeze and eventually the fish goes rancid.
For YFT and similar, you wouldnt even notice it.

They flash freeze it though, so not just really cold bu super quick. The flash freezing really helps then process as it keeps the ice crystals very small so they don't burst cell walls and ruin the flavour. Unfortunately freezing in a home freezer will degrade the flesh.

But try freezing your YFT, I think if you treat it right, trim it a little oversize, dont wash in freshwater as that causes the worst of the sharp crystals hlok is referring to etc.
After thawing trim away a little around your chunk to reveal fresh flesh. The alternate is canned longtail/Albacore!
When we were selling to the Japs, they were processing YFT in this way to sell in the supermarkets over there frozen.

Yes I do look at the flesh
If it looks bad then I obviously don't eat it, are they always easy to see with the naked eye though?

Kane, maybe the guy is getting mixed up with Atlantic salmon. You absolutely need to FREEZE them before you sashimi them as they can have a nasty worm that can at Worste result in death. we were told when we were over in Vancouver last year, as I was ready to cut it Up on the boat and the skipper warned us.
Always eaten tuna sashimi fresh.

the guy is an ex tuna farm diver (tuna roundups and tows in south australia) im the same as you though and have always eaten them fresh without much care. the guy is a bit "funny" but due to his prior experience working with export quality tuna i gave his normally crap opinion some extra thought ;)

never eaten it , well i did once. but never heard of that prob with the tuna.but as they say, if in doubt chuck it out.
