Sambo sashimi
OK... we all know the sambo as being regarded the neighbour's fish.... so having caught an 18kg specimen last week handed a slab of the fish over to the neighbour who happens to be a Japanese chef !
About half an hour later he passed back over the fence a plate of prepared sambo sashimi, complete with soy, wasabi and lemon.
Just put in the fridge to chill for about an hour was his suggestion, then mix up the soy, wasabi and lemon.
The sambo has basically no smell and is very paletable, with a firm texture when dipped in the sauce.
Shared the sashimi with my neighbour on the other side who also fishes and sceptical about the sambo - he has now changed his mind and has vowed to bring in the occasional sambo to do the same, with the rest for use in curry's !

Had a laugh when you mentioned sambo's as neighbours fish, thought we were the only one's doing that, might try your sambo sashimi next time we catch one, other wise sambo's used to be cooked up for our two dogs, they loved it, but one's gone to doggie heaven and too much for the boss (little yorkshire terrier). Love salmon sashimi.

Yellowtail kingfish are
Yellowtail kingfish are supposed to be rated pretty high up the sashimi ladder in japan (dont top tuna though). Same genus as the sambos which could explain it. Would be interesting to compare sambo, amberjack and YTK sashimi though (as people tend to rate them differently for eating cooked )

I don't know about eating Sambo ......... Need to take a really good look and feel of the flesh if you are going to consider it.

I know what you mean...
I was a bit dubious about eating it especially raw (normally only use them in curries as the flesh holds together) but it was surprisingly quite good !
The flesh was very firm and like I said before basically no fish smell !
The sambo was bled fully and straight into ice, and luckily no worms !
With the v5 ban coming in, might be worthwhile targetting the odd sambo.

Belly flap of Sambo is the best .
There isn't many fish we hav'nt Sashimied , they all taste good fresh.
Next time try some lime instead of lemon.

hear another recipe for Sambo
dust in flour, Pan fry in butter& oil on one side then turn squeeze lemon all over then cover with cream let cream reduce . darn nice with mashed spud or chips and salad (can be used on any firm fish) yeah also curries really well

cant believe I'm reading this!!! The best way to enjoy fresh Sambo is to slice up the fillet nice and small, package it really nice, give half to the dog and the other half to the Mother in law. Tell her its King George ,then sit back and enjoy watching the horns come out as she tries to smile when she's eating

i like sambo as long as its bled well and worm free nice piece of fish, try putting it in sweet chilli and bbquing it yumm

sambo skewers
try dicing to about 1 inch square 3 or 4 on a skewer dunk them in your fave batter and deep fry topped with sweet chilli sauce.you will be surprised.
wazo .have you tried sambo b4 the small ones to 5kg are best
