GC , to make life easier for
GC , to make life easier for yourself when filleting fish. Leave the first side still connected to the frame while you cut the second side off , it will keep the spine flat (as opposed to the spine near the head having a big box in it )its also easier to cut the top portion of a fish first (to the spine) then cutting up from the bottom so your cuts join at the spine .
