 Left hillarys looking for sbt, found our selves inside rotto, had a great time released 24, kept 3 for the pets, no bait very little birds just sight them and motor up until we loaded up the 2 lures and rerepeat, good fun not huge but good fun on light gear

 Wrap the fillet in paper towel for a few hours or a day before slicing also. Can also do seared tuna loin in white and black sesame, marinated tuna poke bowls, cerviche tuna, preserved tuna in chilli oil. Such a tasty underrated fish. Just don't over cook it as it dries out and tastes junk. But your rite with the bleeding part they have heaps in them and every little bit needs to be bled out. Along with removing every bit of red/blood meat. Tiny cut just above the pec fin after spiking and into a bucket of water for 10mins before ice slurry.

I was introduced to 'true' wasabi paste about 12 months ago.  The green wasabi paste you see in a tube at Coles and Woolworths is 31% horseradish and only 4.5% wasabi japonica.  Asian shops may stock the real stuff, other than that it's availabe at the Boatshed Market in Cottesloe.  A product from NZ of all places. It's called purewasabi and is made by Coppersfolly.

 We made our own in Japan. Rub th eroot (looks like ginger) on a little board with sharkskin on it. You add a little suagr by tatse to balance the bitterness and it is bloody good!

 Some grown commercially in Tassie and a few in Victoria. I think it like cool and moist/wet places. Lived in villages Japan for a few years and there seemed to be several varieties but  here maybe 1-2 grown. Grating it fresh is the best if you can, as the grating, traditionally rubbing the root againdst sharkskin covered board  but otherwise very fine coppoer or stainless graters,  causes release of extra chemicals and they all add to the best flavour.
