Easiest fish camping recipes
Submitted by randall df223 on Wed, 2014-03-26 19:55
This is a thread that I hope will promote some really easy, cheap and tasty recipes that one can "fall back on" when away camping and you only have a few non-perishables and some freshly caught fish.
The essentials are:
Fresh fish
Non-perishable ingredients you can stock your camp pantry with
Must be:
Quick
Easy
Cheap
I'll start with a north indian fish curry.

Easy cooking
With herring just chuck them straight on to the hotplate, guts in scales and all. The gizzards shrivel up n to a little ball and the scales lift off when its cooked or the other way is to gill and gut your fish, rub butter on the outside, wrap in alfoil and cook in the coals.
Not a believer of using spices to ruin the taste of fresh fish and looking forward to having robinson sea bream for tea tomorrow night. yummo

I would never crucify
I would never crucify robinson sea bream in a curry! My north indian curry is a peasant dish and I would use a shark mackerel or similiar. ;)

Mackeral?
Not a fan of mackerel, grey, Spaniard, school. shark or blue and will only bring one home if someone wants one.
I'm afraid I have been spoilt over the years with a continuing supply of quality eating fish though I still love herring and fresh tuna or salmon patties.
All I put on fish is a little salt and a sprinkle of vinegar.

Geez Randall, if thats quick
Geez Randall, if thats quick and easy, Id hate to see a difficult one.....Fillets, fry pan, oil, salt, pepper, egg, bread, fish sangas, quick, easy and yummo!
I am, as I've said, merely competent. But in an age of incompetence, that makes me extraordinary.

I should have included
I should have included "tasty" as an essential criteria...
Geez guys, live a little, expand your taste horizons outside australia!!!
Having said that, there are lots of fish that just go straight on the barbie without additional flavouring...

Spices?
Might as well have a handful of spice in one hand a hunk of fish in the other and take alternate bites out of each.
Most fish have a delicate flavour to be enjoyed not covered up by foreign substances but that's just my opinion

I am a connoisseur of fish... and if it deserves no extra flavouring, it gets no extra flavouring...
THE POINT OF THIS THREAD is to promote camping fish recipes with what you have available in your camping pantry at the time and perhaps promote some thought to what non-perishables one could include in their camping pantry...

Fog dog beer batter
- fog dog beer batter
- cold beer
- chunks of fresh salmon
- pan, BBQ & oil.
follow instructions...delicious. We use the leftovers to batter up cabanosi, polish sausage and mars bars. Bit dear for what it is though, but it's easy and it goes a fair way.
Stick the battered fish between two bits of bread with butter and tartare sauce...artery hardeningly awesome.

I understand and agree with
I understand and agree with those that wouldn't want to spoil the taste of quality fish but for reluctant fish eaters I have a very simple recipe that has won over a few and is very easy.
Roughly equal measures of sweet chilli sauce and honey. Splash of soy sauce. Mix fish in with this then throw pieces in with bread crumbs and press them on a little with hands. Cook on hotplate with butter. Not too hot and not with oil, as they will burn. Pretty tasty and great for those that don't love fish.
Cheers,
Mat.
P.S. After many trials and errors, my favourite and very simple fish batter recipe is- equal parts corn flour, self- raising flour and salt and pepper to taste. Mix with beer or cold water to form a batter (the runnier it is, the lighter it will be). Cook in oil of choice (not olive oil).

portugese
as a cheap and easy solution I get some of the portugese chicken seasoning from masterfoods brands, sprinkle a bit on both sides and hit the frying pan
its a nice subtle flavour without ruining the flavour of the fish, use this frequently on demersals

coat the fish with tumeric, salt and pepper - deep fry.
or
canned mango with a little bit of its syrup, coconut milk, fish fillet in aluminium foil over hot pan or bbq. - Both canned mango & coconut milk come in cans so are not perishable. Learn this from Malcolm Douglas when he went fishing in the Outback with his dog...

Marron, Cray, Prawn, Crab
on Buttered bread, thousand Island Sause (for camping either Mayo/Tomato sauice mixed to taste or just a jar from Woolies etc) and Alfafa sprouts - always a camping favourite of ours.
Fish (especially whiting) plain in the pan with heaps off butter - dont overcook - yum.
