Hey Everyone i am currently learning how to cook seafood any one have any good recipes or tips on how to make a tasty sea food meal?

the best way i like fresh fish
is filleted cut thinly about 2 to 3 cm lightly covered in flour pan fried on low heat till golden brown! just add lemon and a sprinkle of vinegar beautiful!
or for breakfast i like to put it in the oven wrapped in tin foil with lemons and garlic on a low heat! if the fish quality is not that great add herbs and spices!

we only use fairy bread
when we dont catch fish!!! doesnt happen very often! even if we do have to eat wobby! lol

deffinately if it is not too big, whole, wrapped in foil. inside the stomach cavity and over the fish, put herbs, spices and any flavours! cooked right, the flesh just flakes off from the bone and is so nice.

Keep it simple
I find the best way to enjoy fish is to keep it as simple as possible.. Thats why I would have to agree with snappermiles on the pan fry, I also dont mind a nice beer battered fillet. The best fish dish I have ever tasted was a cajun spiced spanish makerel steak, it was unbelievable!

Try it Jamie, I used to think 7 - 10 was good wait till ya try this time, notice the colour of the cray (brighter more vibrant colour imo.). The meat becomes like velvet and the flesh is sweeter as well. Put it this way the missus never used to eat crays (12 years) but she has started now. Rolling boil, crays in back to boil 22 min straight into an ice bath.

Peel the tail and cook it in butter in a frypan or the other way is 6 minutes in a microwave and dipped in a mixture of 1000 island dressing and sweet chilli sauce.

crays, unto boiling water, bring back to boil and then turn heat off and let them cool.

prawns and crays and crabs is better than boiling them NO DOUBT.
Fish, I usually buy a pre mix crumb called COOKACRUMB in lemon herb or Cajun spices or something similar. Shallow fried, drained well and is super. Thats how I cook my Dhuie fillets/chunks.

COOKING CRAYS
I BOIL THE CRAYS FOR 12 MINS AFTER WATER COMES BACK TO BOIL WITH EITHER SEA WATER OR SALTED FRESH WATER.
HAVE NEVER STEAMED CRAYS BUT SOUNDS LIKE A GOOD METHOD, HOW LONG DO YOU NORMALLY STEAM THE CRAYS?

Tonight's Meal
Was a very simple King Prawn sweet chilli stir fry. I use a sauce from a packet as it works a treat. The cooking bit takes about 5 mins top otherwise it's over-done.
300 grams raw King Prawns
Fresh broccoli floriets cut in half
Red and green capicum
Snow peas
Baby corn
Sweat chilli sauce recipe packet - or - sweet chilli sauce with fish sauce, oyster sauce and soy sauce...
Quck stir-fry the prawns (peeled) in oil for about 60 seconds. Toss in all vegies and stir-fry for a further 1-2 mins. Add the sauce and stri-fry for another couple of minutes then let sit for a minute or two with heat on very low. Serve over a bed of hot drained noodles... Vegies must be firm and prawns just cooked.
My wife loves it and so do I.

best way to cook seafood is to experiment with the basics. all food can taste great or shite, only way to learn is to try. we all have our favourite ways of cooking food but it might not suit others. in most occasions simple is best. i do prefer pan fried fish and sometimes i might sprinkle a bit of lemon pepper on it

One very important lesson to learn with cooking fish-------DO NOT OVER COOK it, nothing puts me off eating fish more than if its over cooked and its so very easy to do.

gotta agree with you there John. just under cook it in the pan and by the time you chow down it is ready. the heat in it keeps it cooking

Shark I deep fry in tempura
Shark I deep fry in tempura batter and serve with lemon and sweet chilli sauce.
If you like Occy: Cut into good size bite pieces simmer for around 20 mins (test for tenderness as you can over cook) drain and let cool. Cut up parsley,garlic lemon juice and olive oil combine all and chill in fridge Awesome.
Herring pan fried in butter (skin down) squeeze lemon juice and salt. Best brekky ever.

Sharp knife and fingers, cut what you can off then pull whats left off.
Usually I don't bother because it takes too much mucking about and the fish eat it anyway, just cut the stringers off your hook when you reckon there is too many there.

One of the best under rated fish
is Queenfish , fresh , first up catch and bleed then straight into the esky , knock the fillets off as soon as you get back on dry land , keep chilled , at this point an ice cold beer goes down pretty bloody well !!! , trim the fillets to make sure you get rid of all the bones and the skin , keep it simple , dust him with some flower then onto a well heated hotplate covered in olive oil , with a squeeze of lemon and maybe some cracked pepper over the top , cook till you think it's still got a couple of minutes to go and take it off the heat , allow to stand for a couple of minutes, have another beer at this point in time and reflect on how bloody good life is , eat this with your fingers straight off the plate then think to yourself why the bloody hell have I let all those queenfish go in the past !!!! if you haven't caught a Queenfish well then do yourself a favour and get your arse up north!!!!

one thing with all seafood
is to never use fresh water, always use sea water, for cleaning,
washing, cooking. I have an extra bucket with a lid in the boat
for this purpose.
