Another winter bacon, smoked trout and a friendly fox

Quick bacon run tried a couple different recipes, came out nice. Last batch slightly salty, didn't bother me. Chopped most of the fat off prior to brine also soaked this batch in freshwater for 12 hours and dropped salt level to 40. Have some in whisky, honey and brown sugar will see how that goes.

Yes, saw a small mob the other arvo that looked in good condition however the old pig dog is well past catching another pig. It did get me looking on gumtree for another dog but after thinking about all the training and walking and running through the Bush with a gut full of beer quickly became a crap idea. Have marinated and hot smoked lots of wild pork ribs but never a bacon.

Im also too long in the tooth (and unfit) to be dogging anymore but still enjoy a stroll with the rifle. Got one old dog left, and she is spoilt rotten now days. That bacon looks yummo, and I can only imagine the smell would be even better than it looks.
