Amberjacks are only occasionally caught here and are hardly ever eaten, Jack Crevalle are an overseas species to us but GT's or Brassy Trevs would be similar and are are both fairly dry and bland. If you really did want to eat them you would prolly fish cake or Thai green curry them.
