The thing I notice is when I'm catching them is I'm also getting green ribbon weed come up occasionly on the hooks or sinker so I think that must be a key factor.
That and low ground that has sand holes

Best hooks I have found for off shore is either snelled 2/0 or 3/0 with a strip of squid or occur but I found squid better using Californian squid cutting them in half to cover both hooks

Mustard hoodlums 1/0 are good.they are strong enough that if you hook a big dhu they won't straighten and you can still get a reasonably heavy trace through the eye.
As your probably already know half the problem with targeting kgs is that you will get heaps of demersal so it pays to use strong gear
